The problem with going gluten-free is that it getting harder and harder to cheat! I didn’t really think that my daughter had a major problem with gluten until we got it all out of her system. She has had an obvious reaction each time she has snuck a Ritz or a cookie at a party. My husband’s biggest complaint with taking her off gluten voluntarily was that she might miss something. Here is the deal! She hasn’t really missed anything, and I have really not missed those bad diapers. Well, this week my daughter’s teacher informed me that my daughter misses Goldfish crackers. She prefers fruit to Goldfish crackers, but she misses them now that all the other little preschoolers can have them. Wow! Peer pressure starts early! What is a mom to do? Did you know that it is very difficult to find a decent, gluten-free, cheddar cracker on the market? Most of them taste like cardboard with a sprinkling of cheddar flavoring. Don’t bother taste testing for yourself. There is another option. You can MAKE them!
After a bad attempt to make gluten-free Ritz crackers this week, I was a little nervous to try any new recipe. This one seems to have all the support a good recipe needs so I decided to give it a try. Let me just say that it is a GOOD thing that I worked out yesterday because I probably taste tested a few too many…to check quality. Yes, that sounds good…. The only change I made to this recipe was the cookie cutter. A few years ago I bought one of the Wilton 101 Cookie Cutter tubs. It has 3 small cookie cutters- a heart, a star, and a scalloped circle. All three of them would be the perfect size for these crackers. Melanie gave me a great tip. Just make sure that you roll the dough out thin enough. Mine were actually closer to 1/16″ than 1/8″ thick.
Here are our Starfish crackers. I had to put them away to keep the kids from eating them all. They kept coming back for more, and I will be making more soon. I might need to suggest doubling this recipe. They are THAT good!
